
Just like this recipe, I want this introduction to be short and sweet. It’s our go to breakfast for a lazy Sunday for two reasons: It’s simple to make with very little dishes left in the sink and it’s super packed with protein and healthy fats! Did I mention it’s only sweetened with bananas?!
Ingredients:
2 Bananas
5 Eggs
1/2 cup Grass-fed Butter (softened)
1/2 cup Coconut Flour
1 tsp Vanilla Extract
1 tsp Baking Soda
Dark chocolate chips to taste
1 tbsp Maca Powder (optional)
Directions:
- Preheat oven to 375°F
- Blend all ingredients except chocolate chips. Immersion blender works best for this.
- Grease an 8″ baking dish and add the batter. At this point, you can throw in the chocolate chips to your heart’s desire.
- Bake for 20-25 mins until set in the middle.
- Enjoy with your favorite coffee or tea. Bonus if you add butter!
Paleo Chocolate Chip Banana Bread
