Paleo Chocolate Chip Banana Bread
  • 2 Bananas
  • 5 Eggs
  • ½ cup Grass-fed Butter (softened)
  • ½ cup Coconut Flour
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • Dark chocolate chips to taste
  • 1 tbsp Maca Powder (optional)
  1. Preheat oven to 375°F
  2. Blend all ingredients except chocolate chips. Immersion blender works best for this.
  3. Grease an 8" baking dish and add the batter. At this point, you can throw in the chocolate chips to your heart's desire.
  4. Bake for 20-25 mins until set in the middle.
  5. Enjoy with your favorite coffee or tea. Bonus if you add butter!
